Our At the Table series returns, and this one is a little closer to home.

Chloe has been part of The Palomar since before we opened our doors. Now, as she prepares to head to Paris for the next chapter of her career, she’s taking over our kitchen for one very special evening.

At the Table with Chloe: Last Supper is a one-night-only dinner tracing her journey as a chef through the ingredients, dishes and moments that have shaped her along the way.

On the menu, coral trout, one of her favourite fish; a return to the mussel dish she created when she was nominated for Young Chef of the Year; and lamb saddle, the protein she loves cooking most.

A personal menu, a few familiar faces and one last evening around the table before she goes.
