COPA at 25hours Hotel Jakarta teams up with Santanera Bali for a two-night dining collaboration bringing contemporary Latin American flavours from Canggu to the capital.
Taking place on Friday and Saturday, 17–18 July 2026, the collaboration brings together Santanera Bali and COPA for a dinner shaped by charcoal cooking, fermentation, sharp cocktails, and plates made for passing around the table, with contributions from Santanera’s Andrés Becerra and COPA’s Chef Matias Mardones.
