When Dario Cecchini and Haya Molcho cook together, it’s loud, full of heart, and truly one of a kind. On 11 and 12 July 2025, the legendary butcher from Panzano in Chianti brings his nose-to-tail philosophy to Zurich – and teams up with NENI founder Haya Molcho’s bold and vibrant Levantine cuisine.
Dario isn’t a chef – he’s a butcher. And one of the most famous in the world. Featured in the Netflix series Chef’s Table and known for his passionate presence and sustainable approach to meat, Dario stands for respect for the animal and true craftsmanship. At his side: Haya Molcho, serving up her signature dishes and signature Balagan vibes to complement the experience.

Expect Chianti-style beef tartare with NENI brioche and aubergine, warm beef salad, homemade focaccia with tomato & labneh, carpaccio with a Levantine twist – and of course: a juicy Tomahawk steak. For dessert? Haya’s iconic Balagan Dessert Show.
